Envision the colors of the rainbow greeting us in the supermarket. Smell citrus with their bright and zesty scents. Taste berries of red, black and blue with their combinations of sweet and sour. Feel avocados’ tough exterior of skin that protects the inner, tender flesh. Hear asparagus snap when breaking off their tough ends in preparation for the next grilling experience. Lookout for local and source seasonality by choosing fruits and vegetables that are in season.

Calling all kids! Did you know, plants are living organisms that use the sun (photosynthesis) to create their own food? They grow from the earth, water or on other plants. Plants generally have roots, stems, leaves, flowers and produce seeds. We see them in various forms: fruits and vegetables (fresh, frozen, dried or canned), along with herbs and spices. Other forms include whole grains, seeds, oils, nuts/nut butters and legumes (fresh or green: beans, peas and peanuts). Pulses are considered the dried, edible seeds of the legume plant (beans, lentils and peas).

Mindfully prepare snacks and meals by including plant-based sources. Make half the plate fruits and vegetables. Focus on whole fruits and vary veggies. Plants offer a variety of vitamins, antioxidants, minerals, fiber and water all of which fuel our bodies! Plant-based eating patterns not only impact environmental sustainability, improve gut health and immunity, they also reduce risk for chronic disease. Engage your senses and consider that one day you may discover a preference for prunes (dried plums) or a likeness to leeks. Bite by bite, embark on a plant-based eating experience by bringing family and friends along for the journey!
